One of our new impressive savory dishes this year, that guests can’t stop raving about is our ham, asparagus and gruyere frittata.  It’s super easy to make and it’s perfect for breakfast, lunch or dinner.

Another great thing about this recipe is it’s easy to make for small or large groups. Here’s the ingredients you need to make for two.

Preheat the oven to 350 degrees F.  We like to bake this in our 8oz. long ramekins but you can use a glass dish or cast-iron skillet especially for a large group.  Spray or butter the two individual ramekins well.

  • 4 eggs
  • 3 Tbsps. sour cream
  • ¼ Tsp salt
  • Pinch pepper
  • 1/4 cup chopped asparagus
  • 1/4 cup cooked ham, chopped
  • 1 tsp turmeric
  • 6 Tbsps. grated Gruyère cheese

In a small bowl, add the eggs, sour cream, salt, pepper, and turmeric.  Beat until light and airy then add half the gruyere cheese.

Chop a couple asparagus spears in small round slices and then steam in microwave for 1 1/2 minutes along with the two tips of the spear.

Chop cooked ham into small cubes and microwave for 30 seconds.

Place the ramekins on baking sheet and add the egg mixture to the ramekins. Evenly spread the asparagus slices and ham cubes in each ramekin, then top with the long piece of asparagus spear and sprinkle remaining cheese on top.

Bake for about 15 minutes, until set and the egg has risen above the ramekin edge.  Try to serve straight from the oven to ensure the frittata doesn’t have a chance to cool and fall.
